Leek and Fish Rice Paper Rolls

- 12 leaves Rice paper (round, around 22 cm)
- 2 stalks Leeks
- 4 Tbsps butter
- 400 grams white fish fillets (such as cod)
- lemon juice
- salt
- freshly ground peppers

Preparation steps
Soak and pat dry the rice paper according to the package instructions.
Rinse, clean and chop the leeks. Set aside a small amount for garnish. Sauté the sliced leeks in 1-2 tablespoons butter until translucent, 2-3 minutes. Set aside and cool. Rinse the fish, pat dry and cut into small cubes. Mix with the leeks and season with lemon juice, salt and pepper.
Fill each rice paper with 1-2 tablespoons of leek filling. Fold in edges of rice paper and roll. Place seam-side down in a steamer basket greased with melted butter. Place steamer basket over hot water, cover and steam about 8 minutes.
Brown the remaining butter. Remove from the heat and season with lemon juice, salt and pepper.
Arrange the rolls on a plate, drizzle with butter and serve garnished with the sliced red chile and remaining leeks.
