- 2 Leeks
- salt
- 1 cup glazed deep sea Prawn
- ⅔ cup cream cheese
- 2 eggs
- ⅞ cup cream
- freshly ground peppers
- butter (for the dish)
- 3 sheets phyllo pastry (filo)
- 2 Tbsps melted butter
- 1 unwaxed lemon

Preparation steps
1.
Heat the oven to 180°C | 350F | gas 4.

Wash and clean the leek and cut into rings. Blanche in boiling, salted water for about 2 minutes, then place immediately into iced water and drain well. Wash the prawns and drain well.
3.
Mix the cream cheese with the eggs and the cream until smooth. Season with salt and pepper.
4.
Butter the quiche dish and place 3 layers of filo pastry in the dish. Brush each layer with melted butter. Mix the leek and the prawns with the cream cheese and pour into the dish. Wash the lemon and cut into thin slices. Arrange on the top of the quiche.
5.
Cook in the oven for approx. 30 minutes until cooked.
