Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.

Mix together the flour and the yeast. Add the sugar, salt, oil and 150-170 ml water and knead everything into a smooth dough. Cover and leave to rise in a warm place until it has doubled in size.

Mix together the cream, creme fraiche and the eggs and season with salt, ground black pepper and nutmeg.
4.
Re-knead the dough quickly, split into four pieces and line four mini tart dishes (Ø 20-22 cm) with it.
5.
Place the egg-cream mixture on top then add the ham and the spring onions and sprinkle with cheese. Bake for 12-15 minutes.
