500 grams fresh Brussels sprouts
3 fresh Apricot
2 garlic cloves
600 grams Lamb fillet (ready to cook)
4 sprigs thyme
30 grams butter
250 milliliters Vegetable broth
100 milliliters Whipped cream
salt
freshly ground peppers
Nutmeg
1 Tbsp red peppercorns
2 Tbsps olive oil

Preparation steps

Rinse Brussels sprouts and cut in half, as desired. Rinse apricots, cut in half, remove seeds and julienne. Peel and thinly slice garlic. Rinse lamb, pat dry and cut into bite-size pieces. Rinse thyme and shake dry. Melt butter in a pan and sauté apricots, garlic, thyme and Brussels sprouts.

Deglaze pan with broth and simmer for about 10 minutes over medium heat. Stir in cream, season with salt, pepper and nutmeg and simmer for another 5 minutes.

Place 5 pieces of lamb on each skewer, season with salt and crushed red pepper. Heat oil in a pan and fry skewers for 3 minutes on each side. Season vegetables again and distribute into preheated bowls. Serve with lamb skewers.
