4 garlic cloves
800 grams Ground lamb
1 tsp cilantro (ground)
1 tsp Cumin (ground)
1 generous pinch Red pepper flakes (or cayenne pepper)
1 tsp sweet ground paprika

1 egg
Canola oil (for cooking)
4 sprigs mint
3 Tomatoes
6 shallots
40 milliliters olive oil
1 lemon (juiced)

Preparation steps

Cok wheat according to package instructions until al dente and rinse in cold water, drain well. Peel and chop garlic. Season ground lamb with cumin powder, red pepper, paprika, salt and pepper. Combine with garlic and egg, mix well. With damp hands, shape mixture into small meatballs. Heat a little canola oil in a pan and cook meatballs for about 6-8 minutes on all sides on medium high heat.

Rinse mint, shake dry and pluck off leaves, chop. Rinse and dice tomatoes. Peel shallots and cut into thin rings. Combine drained wheat, diced tomatoes, mint and shallots and drizzle with lemon juice and olive oil. Season with salt and pepper. Thread meatballs on skewers and arrange together with wheat salad on plates. Garnish with lemon slices and mint tips, serve.
