For the marinade

Cumin seeds (about 1 tsp, crushed)

2 tablespoonsSambal oelek
4 tablespoonsSambal oelek
2 tablespoonsground Cumin seeds
2 tablespoonsHerbes de Provence
freshly ground Pepper
4Lemons (cut in pieces)
Skewers with lemon
1400 gramsLamb (from the leg)
1200 gramsGround lamb
2finely chopped Shallots
4pressed Garlic clove
freshly ground Pepper

8 tablespoonschopped, mixed Fresh herbs (such as thyme, oregano, marjoram, basil)
Warm potato
2 kilogramsPotatoes
400 gramsSnow pea
For the dressing
4chopped Garlic clove
4finely diced Chile pepper
16 tablespoonsOlive oil
8 tablespoonsRed wine vinegar
2 teaspoonswhole Cumin seeds
freshly ground Pepper
6 tablespoonsminced cilantro leaf


1 Blend all ingredients until a light green, frothy mixture.
2 (Such as herb butter on hot meat use)
3 Peel garlic, squeeze through the press. Combine with salt and lemon juice. Stir in the oil drop by drop, then in a thin stream (as in a mayonnaise).
4 Cut chicken into bite-size cubes. Mix the ingredients for the marinade and marinate the chicken for 30 minutes. Put the meat on skewers and grill for around 8 minutes.

7 Rinse the potatoes and cool in salted water for 25 minutes and drain.
8 Rinse the snow peas and boil in salted water for 4 minutes. Drain, rinse in cold water and drain.
9 Mix the ingredients for the dressing. Halve the potatoes if necessary and mix with the snow peas and dressing. Serve in a bowl.
