- 2 ½ cups Cheese (e. g. Gouda, cut into 12 strips)
- 2 ⅔ cups Chicken breasts (or beef fillet, cut into 12 slices and flattened)
- ⅜ cup poultry stock (or vegetable stock)
- ½ cup soy sauce
- 1 ½ Tbsps brown sugar
- 1 tsp Mirin
Preparation steps
1.
Soak 12 bamboo skewers in water for a few minutes.
2.
Spear a piece of cheese on each skewer and wrap with a slice of chicken. Fix in place with cocktail sticks.
3.
Bring the stock, soy sauce and sugar to the boil and simmer until reduced by half. Season to taste with mirin.
4.
Brush the meat with the sauce and grill on a hot barbecue for around 5 minutes, brushing from time to time with the sauce. Serve with a seasoning mix of your choice.
