4 cups fresh Raspberries
4 Tbsps powdered sugar
1 Tbsp lemon juice
1 Vanilla bean
cup cream (at least 30 % fat content)

Preparation steps

1.
Clean and wash the raspberries. Drain well.
2.
Mix half of the berries with 2 tbsp icing sugar. Puree with the lemon juice. Strain through a fine sieve.
3.
Slice the vanilla pod lengthwise, scratch out the pulp. Mix the pulp and the rest of the powdered sugar into the cream. Beat until stiff.
4.
Divide the raspberry sauce among the four dessert dishes. Spoon the remaining raspberries over the top and garnish with a dollop of vanilla cream. Decorate with a piece of vanilla pod and serve.
