- 4 sheets gelatin
- 2 eggs
- 1 Vanilla bean
- 2 Tbsps lemon juice
- 50 grams powdered sugar
- 200 grams Quark
- 100 milliliters Whipped cream
- 350 grams mixed Berry (strawberries and raspberries)
- 4 Tbsps Orange juice
- 1 Tbsp honey
- For garnish
- Lemon thyme
- Vanilla bean

Preparation steps

Soften the gelatin in cold water. Separate the eggs and beat the yolks with the slit vanilla pod, lemon juice and powdered sugar over a hot water bath until creamy. Stir in the squeezed gelatin and allow to melt. Remove from the heat, beat until cold, remove the vanilla pod and fold in the quark. Beat the cream until stiff. Beat the egg whites until stiff and fold into the cream. Pour the cream into a bowl, cover and chill at least 3 hours.

Trim and rinse the berries, cut the strawberries into pieces if desired. Arrange on plates. Mix the orange juice with the honey and drizzle over the berries. Scoop out some cream, put on the berries and serve garnished with lemon thyme and vanilla.
