Preparation steps

1.

Peel the potatoes and cook in a little salted water until soft. Dip parsley briefly in boiling water and drain in a colander. Toast the almonds in a non-stick frying pan until golden brown, remove and let cool. Cook the bacon in a pan until crispy and set aside. Season fish fillets with lemon juice. Warm the milk. Puree parsley with half the milk. Season with salt, pepper and nutmeg.

2.

Press the potatoes through a ricer directly into the parsley milk, add the butter and mix with enough of the rest of the milk to make a soft puree. Cover and keep warm. Heat the butter in a pan, pat the fish fillets dry and fry on both sides until golden brown. Season with salt, sprinkle with sesame seeds and arrange on the potato-parsley puree. Top with parsley, sprinkle with almonds and garnish each serving with 1-2 slices of bacon.
