- 700 grams waxy potatoes
- salt
- 1 stick Leeks
- 8 eggs
- 100 grams freshly grated Mountain cheese
- 2 Tbsps freshly chopped parsley
- salt
- freshly ground peppers
- Nutmeg
- 2 Tbsps clarified butter
Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse the potatoes and cook for 20-25 minutes in boiling salted water. Rinse in cold water, drain, peel and allow to cool.

Cut leek lengthwise, rinse under running water, trim and cut into rings. Whisk the eggs and mix in the cheese and parsley. Season with salt, pepper and nutmeg.

Cut the potatoes into bite-sized pieces and fry until golden brown in a high-sided, oven-proof pan coated with clarified butter. Add leek and sauté briefly. Pour in the egg-cheese mixture. Cook briefly on the stovetop and then transfer to preheated oven. Bake for 15-20 minutes. Cut into pieces and serve.
