Whisk the eggs with the cream and season with salt and pepper. Heat butter in a pan and pour in the eggs. Reduce the heat, spread the finely grated cheese over the eggs and cook over low heat until the cheese softens and the eggs start to set, about 5 minutes. Do not stir.

Fold omelet and sprinkle with coarsely shredded cheese. Serve for breakfast with a cup of latte.
