Preparation steps

1.

Beat the eggs with the cream and season with salt and pepper. Rinse and trim the scallions and cut into rings.

2.

Sauté 1/4 of the scallions in a little oil in a nonstick pan for 1-2 minutes. Pour over 1/4 of the egg mixture and crumble some feta over the top. Allow it to slowly set for 3-4 minutes, fold over and transfer to a plate.

Repeat for the remaining omelets.

Serve hot.
