Artichokes owe their unmistakable, tangy aroma to the bitter substance cynarin. Cynarin helps to lower cholesterol levels, supports the liver in its detoxification work, and activates the flow of bile, while other artichoke elements are beneficial for the eyes.
You can also add other herbs such as parsely or dill to add unique flavors.

- ⅓ cup olive oil
- 6 Artichoke hearts (trimmed and halved)
- 4 cloves garlic cloves (crushed and sliced)
- 1 thyme
- salt
- peppers

Preparation steps
1.
Preheat the oven to 190°C (170°C fan) | 375°F | gas 5.
2.
Toss the artichoke heart halves with the olive oil, garlic and some stripped thyme leaves in a large mixing bowl. Season generously and arrange in a roasting dish.
3.
Roast for 25-35 minutes until starting to colour at the edges. Remove from the oven and garnish with the remaining thyme sprigs.
