Preparation steps

Place the flour and butter in a food processor and pulse until the mixture resembles fine breadcrumbs. Add just enough water to form a stiff dough then roll out on a floured board to a thickness of about 1/2 cm/ 1/4 in.

Cut rough circles from the pastry and use to line a greased muffin tin. Place in the fridge and chill for at least one hour.

Heat the oven to 200ºC (180ºC fan) 400ºF, gas 6. Beat together the eggs and cream, add the parmesan and season with salt and pepper. Stir in the chopped tomatoes and pour the mixture into the pastry cases.
4.
Bake for 15 - 20 minutes or until the filling is set and the pastry is golden brown.
