- 11 ozs Puff pastry
- flour (for dusting)
- 2 cups milk
- 1 cup sugar
- 1 tsp vanilla extract
- 1 Tbsp Corn starch
- 1 pinch salt
- ground cinnamon
- 2 eggs
- 3 egg yolks

Preparation steps
1.
Heat the oven to 200°C (180°C fan) 400°F gas 6. Grease a 12 hole muffin tin or 12 individual baking moulds.
2.
Roll out the puff pastry on a floured surface and cut out 12 rounds, approx. 10cm|4" diameter. Line the tins with the pastry rounds.
3.
Bring the milk to a boil in a pan. Remove from the heat.

Mix together the sugar, vanilla and cornflour and add to the milk. Stir well and boil for 2-3 minutes to thicken slightly.
5.
Remove from the heat and cool slightly. Stir in the salt, a pinch of cinnamon, the eggs and egg yolks. Divide the custard between the pastry cases.
6.
Bake for 12-15 minutes. Cool completely before serving.
