For the marinade
2 tsps freshly grated ginger
2 garlic cloves
200 grams Yogurt (0.1% fat)
2 Tbsps vegetable oil
2 tsps ground paprika
Spice mix (1 tsp ground cumin, nutmeg, coriander, black pepper, paprika)
50 grams Sesame seeds
3 Tbsps olive oil
200 grams Yogurt (0.1% fat) (for the dipping sauce)

Preparation steps

For the beef: Rinse the beef and pat dry. Trim the fat and slice into 5 mm (approximately 1/4 inch) thin strips.

For the marinade: Peel the garlic and squeeze the cloves through a garlic press. In a bowl, combine the garlic, ginger, yogurt, vegetable oil, paprika, and spice mix until blended. Coat the beef slices with the marinade, cover with aluminum foil, and allow to sit in the refrigerator to marinate, preferably overnight.

For the dipping sauce: In a dry frying pan, toast the sesame seeds until golden brown. In a bowl, blend the olive oil, yogurt, salt, pepper and lemon juice together. Sprinkle with toasted sesame seeds.

For the beef skewers: Thread the beef strips onto wooden skewers that have been soaked. Preheat the grill and top with aluminum foil. Grill skewers, while brushing with marinade, until cooked through, about 8-10 minutes. For serving: Place beef skewers on a platter alongside the yogurt dipping sauce.
