1 Sirloin steak (1.5 kg and 5 cm thick)
peppers (freshly ground)
2 garlic cloves
1 tsp ground dried rosemary
sunflower oil

400 grams button Mushroom
300 grams Oyster mushrooms
1 Tbsp clarified butter

Preparation steps

Preheat oven to 180° (approximately 350°F).

Rinse steak briefly under cold water and pat dry, then tie with kitchen twine. Peel garlic and rub on steak, then season with black pepper and rub with ground rosemary. Let stand 10 minutes.

Heat 3 tablespoons oil in a large frying pan over high heat. Add steak and fry on until browned on both sides. Transfer steak to a rack and place on a drip pan lined with aluminum foil. Bake about 50 minutes. Test with an instant read thermometer to check for doneness. Internal temperature should be 55°C or approximately 130°F for medium. Let meat rest 5-10 minutes in open oven.

Meanwhile, wipe mushrooms clean with paper towels and halve if large. Fry mushrooms in clarified butter on all sides over high heat. Season with salt and pepper.

Transfer meat to a preheated platter and serve covered with mushrooms.
