Preparation steps
1.
Peel the mangoes, cut the flesh into columns and remove the pit. Squeeze the lime and orange. Rinse 3 mint sprigs, mix with the two juices and the mango. Cover and refrigerate.
2.
Beat egg yolks with egg, sugar and honey until creamy in a large bowl. Add the marsala and place the bowl over hot water until it has doubled. Place the bowl in a cold water bath and beat until cold. Serve in glasses or bowls with mangoes. Serve with remaining mint as garnish.
