8 ozs Sweet potato

3 Tbsps olive oil

Preparation steps

1.

Peel the beetroot, potatoes and sweet potatoes. Plane the vegetables as thinly as possible; it is best to plane the beetroot separately, otherwise the juice will rub off onto the potatoes.

Leave all the vegetables to stand for about 20 minutes in salted water.

Preheat the oven to 350ºF and line two baking sheets with parchment paper.

Rinse the vegetables in a colander and spread the slices on paper towels. Pat dry with a second layer of paper towels.

Mix with the oil and place on the baking sheets. Bake for 15-20 minutes (depending on thickness and size of the vegetable slices) until crispy.

Remove from the oven and serve showered with coarse salt.
