250 milliliters olive oil

Preparation steps

For the mayonnaise: Beat the yolks with the mustard with an immersion blender or whisk. Add the oil by drops at first, then in a thin stream, beating constantly, until a thick mayonnaise arises. Season with salt and lemon juice and spoon the mayonnaise into a small bowl.

Peel and rinse the potatoes and cut into narrow sticks. Pat dry thoroughly and fry in hot oil until golden brown. Remove, drain well and toss with salt. Serve with mayonnaise.
