8 cups cooking Apple peeled; cored and sliced (McIntosh; Gala, Fuji, Granny Smith, etc. )
4 Tbsps freshly squeezed lemon juice (2 lemons)
¼ cup dark brown sugar
2 Tbsps white Granulated sugar
1.333 cups water
½ tsp ground cinnamon
1 ripe Apple (diced for garnish)

Preparation steps

In a large saucepan, combine apples, lemon juice, sugar, water and cinnamon. Cover, and bring to a boil over medium-high heat. Reduce heat and simmer for 20 to 25 minutes, or until apples are soft. Remove from heat and allow to cool. Mash with a potato masher. Serve warm or cold, garnished with diced apples.
