800 grams Russet apple (or other tart apples)
1 lemon (juice and zest)
50 grams sugar
2 Tbsps raisins
2 tsps freshly grated ginger
150 grams Crème fraiche
100 grams Whipped cream
1 packet Vanilla sugar

Preparation steps

1.

Peel the apples, quarter, and remove the core. Cut into slices.

Boil the apples with 500 ml (approximately 17 ounces) of water, lemon juice, half the lemon zest, sugar (to taste) and raisins in a saucepan and simmer over medium heat for a few minutes, until the apple slices are soft but not falling apart. (Depending on the type of apple). Remove from the heat and let cool.

3.

Mix the creme fraiche, cream, and vanilla sugar with an electric hand mixer. Fold in the remaining lemon zest and grated ginger. Serve as a garnish for the apple compote.
