Preparation steps

Drain pickles and cut into thin slices. Rinse and quarter apple, core and cut into thin slices. Peel onion, halve and cut into thin strips. Whisk sour cream with yogurt and some pickling liquid, season with salt and pepper.

Combine dill pickles, apple slices, onion and dill, mix well. Add sauce and toss well. Cut salmon into thin slices, arrange on plates and drizzle with the sauce. Garnish with dill sprigs and lemon wedges and serve.
