- 5 eggs
- 100 grams soft butter
- 1 tsp salt
- 80 milliliters Buttermilk
- 150 grams Pastry flour
- 3 dried, pickled in oil Tomatoes
- 1 Red chili pepper
- pitted black Olives
- 1 Tbsp finely chopped Basil
- For cooking
- vegetable oil (for waffle iron)
Preparation steps
1.
Separate eggs and beat egg whites until stiff. Mix yolks with butter and salt until fluffy and combine with buttermilk and flour.
Drain tomatoes and chop finely. Rinse chile, remove seeds and chop finely. Mix tomatoes and chile with half dough, then fold in remaining dough and egg whites. Slice olives and mix into dough along with basil.

Add about 2 tablespoons batter onto center of lower back area of preheated and oiled waffle iron. Close waffle iron and cook batter 3-4 minutes until golden brown. Lay finished waffles on wire rack and serve immediately.
