Preparation steps

Separate the eggs and beat the yolks with the milk, flour, baking powder and cornmeal to make a smooth batter and let it rest for about 30 minutes. Rinse the peppers, cut in half, remove seeds and ribs and cut into small cubes.

Heat the waffle iron and lightly grease. Beat the egg whites with a pinch of salt until stiff and fold into the batter along with the diced peppers. Pour 2-3 tablespoons of batter onto the waffle iron and bake each until golden brown. Serve the waffles lukewarm on a platter.
