Hearty Cheese Waffles
With eggs, parmesan and wholemeal flour you can quickly conjure up hearty waffles and do yourself some good! Eggs are rich in lecithin, vitamin B2 and choline, a neurotransmitter. This ensures full concentration power. The hard cheese also provides plenty of calcium for strong bones. And the dietary fibres ensure a long-lasting satiation.

- 3 eggs
- 250 grams Pastry flour
- 100 grams freshly grated Parmesan
- 1 generous pinch Baking powder
- 1 pinch salt
- 375 milliliters milk
- vegetable oil
Separate eggs, Whisk yolks with flour, cheese, baking powder, salt and milk until smooth. Let rest for about 20 minutes.
Heat and oil waffle pan. Beat egg whites until stiff and fold into batter. Pour 1-2 tablespoons of batter into waffle pan and bake until golden. Repeat until all batter is used. Serve lukewarm or cold with fresh lettuce.
