2 Tbsps dry sherry
water
1 Corn salad (lamb's lettuce)
For the dressing
1 tsp sugar
1 tsp Mustard
1 lemon (juice)
2 cloves garlic cloves (crushed)
5 Tbsps olive oil
2 Tbsps Sherry vinegar
1 tsp Cumin (toasted in a hot pan)
salt

To garnish
mint
4 ozs smoked Salmon (finely chopped)

1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Small knife, 1 Whisk, 1 Citrus juicer, 2 ice-cube trays, 1 Jug

Preparation steps

Heat the sherry and 5 cm|2" water in a frying pan. Add the fish and bring to a simmer. Cook for 3-5 minutes until the fish flakes easily when tested with a fork. Remove the fish and drain on kitchen paper. Chill for about 30 minutes.

For the dressing: whisk together all the ingredients and season to taste with salt and pepper.

Divide the lettuce leaves between 4 serving bowls. Place the fish on top and scatter over the smoked salmon and mint leaves. Serve with the dressing separately.
