Ingredients

6 cups low-starch potatoes (scrubbed)
3 Tbsps extra virgin olive oil
salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps fresh rosemary (chopped)
Caramelized Onions
2 Tbsps butter
2 Tbsps olive oil
6 cups onions (peeled and sliced)
salt (to taste)
1 Tbsp sugar
For Hamburgers
24 ozs ground Sirloin steak (chuck or round)
coarse salt (to taste)
freshly ground Black pepper (to taste)
Oil (for grill grate)
4 Burger buns
1 Tbsp melted butter

Preparation steps

For Roasted Potato Wedges:

Adjust an oven rack to the middle position. Preheat the oven to 425º F. Toss the potatoes and oil in a medium bowl to coat; season with salt and pepper; toss again.

Place the potatoes flesh side down in a single layer in a shallow roasting pan. Cover tightly with aluminum foil and cook for 20 minutes. Remove the foil and roast until the side of the potato touching the pan is crusty and golden brown, about 15 minutes more. Remove the pan from the oven and, with a metal spatula, carefully turn the potatoes. (To protect the crusts, press the spatula against the pan as it slides under the potato). Return the pan to the oven and roast until the side of the potato now touching the pan is crusty and golden brown and the skin has raisin like wrinkles, 5 to 10 minutes more.

In the last 3 minutes of roasting time, sprinkle 2 tablespoons of chopped fresh rosemary leaves evenly over the potatoes.

Serve potatoes wedges warm with grilled hamburger.

For Caramelized Onions:

Meanwhile, melt butter with olive oil in a thick-bottomed pan until the oil is shimmering. Add the sliced onions and stir to coat. Cook, stirring on occasion for 7 to 10 minutes.. Do not let the onions burn or dry out. Sprinkle the salt and sugar over the onions.

Cook for about 25 to 30 minutes, stirring frequently. If onions seem to be drying out add a little water or oil to the pan. Onions should be browned but not burnt. Continue to cook and stir, scraping up all the browned bits stuck to the bottom of the pan, until the onions are a rich brown color.

For Grilled Hamburgers:

Moisten your clean hands with cold water and divide the ground beef in 4 equal portions. Form each portion into 4 generous patties. Season with salt and pepper.

Refrigerate until ready to cook.

Prepare the grill for direct grilling and preheat to high. Brush the grill grate with oil.

Place the prepared burgers on the hot oiled grill grate. Grill for 5 to 7 minutes per side for medium, or until an instant read thermometer inserted through the side of the burger into the center reaches 160º F.

Brush the rolls with melted butter and toast them on the grill for 30 to 45 seconds. Place a burger on the bottom half of the cut side of the toasted bun, top with caramelized onions and the remaining bun half. Serve with potato wedges.
