For the bread
350 grams Pastry flour
½ cube Yeast (21 grams)
1 tsp sugar
200 milliliters lukewarm milk
50 grams cornstarch
1 tsp salt
1 egg yolk
3 Tbsps Sesame seeds
For the filling
200 cooked ham (in slices)
200 grams Emmentaler cheese (in slices)
4 Tomatoes
8 Lettuce
100 grams Mayonnaise
salt
freshly ground peppers

Preparation steps

1.

For the bread, mix the yeast, sugar and milk until smooth. Knead with the flour, cornstarch and salt until smooth. Cover in warm place for about 30 minutes (if desired, place in an oven set to 50°C (approximately 125°F).

Knead the dough on a floured surface and divide into 8 equal portions. Shape the dough into small balls and pack together to make a ring. Cover and let rest for another 30 minutes.

Preheat the oven to 220°C (approximately 425°F). Whisk the egg yolk with 2 tablespoons of water. Brush on the dough ring and sprinkle with sesame seeds. Bake for 12-15 minutes, until golden brown. Cool on a wire rack.

Cut the sesame ring horizontally. Spread the mayonnaise on the bottom ring. Cover with lettuce, cheese and ham.

5.

Place the tomato slices on top and season with salt and pepper. Cover with the top ring. Serve immediately.
