1 Granny Smith Apple (peeled; cored and thinly sliced)
fresh thyme (to taste)
8 slices country-style white bread (cut to a thickness of 1/2-inch)
¼ cup whole-grain Mustard
2 cups shredded Gruyere
8 slices Black Forest ham
1 handful Arugula (rinsed and dried)
freshly ground Black pepper (to taste)

Preparation steps

Melt butter in a 12-inch skillet set over medium heat. Add the apple slices and thyme. Cook, stirring frequently, until apples are almost soft, about 3 to 4 minutes. Set aside to cool for about 5 minutes..

Meanwhile, preheat the panini press. Spread mustard on one side of each bread slice. Sprinkle 1/4 cup of shredded cheese on 4 slices of bread and top with a slice of ham, sliced apples, arugula, a second slice of ham and remaining cheese. Season to taste with cracked pepper. Cover with remaining bread slices.

Grill in the panini press for about 5 to 6 minutes, or until the cheese has melted and the bread is crispy and golden. Slice in half and serve hot.
