- 2 Avocados
- 2 shallots
- 1 chili pepper
- 2 Tomatoes
- Lime juice
- salt
- freshly ground peppers
- 4 Tortillas
- Vegetables (as desired)

Preparation steps
1.
Blanch tomatoes in boiling water, then rinse, peel, remove seeds and cut into small cubes. Peel and finely dice shallots.

Finely chop chile.
3.
Halve avocados lengthwise and remove pits. Scoop out flesh and cut into small cubes. Mash avocado with a fork and mix thoroughly with lime juice, shallots, chile and tomatoes. Season with salt and pepper and spread on tortillas. Add vegetables as desired, and roll up.
