- 1 Tbsp Coriander
- 1 tsp Cumin
- 1 tsp black peppercorns
- 2 Tbsps olive oil
- 8 mini gluten-free tortillas
- 1 cup soft dairy-free cheese (cubed)
- 4 Roma tomatoes (sliced)
- 2 scallions (sliced)
- 1 ½ cups Tomatillo (diced)
- 1 Lime (juiced)
- 1 Tbsp distilled vinegar
- cilantro (to garnish)
- flaked Sea salt
Preparation steps

Preheat the grill to hot. Toast the spices in a dry frying pan set over a moderate heat until hot.

Coarsely grind in a mortar and pestle or spice grinder, seasoning with salt. Brush the tortillas with olive oil and grill for a minute on both sides.

Remove from the grill and top with the cheese and slices of tomato. Season with more of the spice mix and return to the grill for 1 - 2 minutes until the cheese is melted and the tomatoes coloured.
4.
Toss the spring onions and tomatillo with the lime juice and vinegar. Season with salt and spoon on top of the gratins. Serve with a garnish of coriander.
