Preparation steps

Blanch tomatoes for a few seconds, peel, quarter and remove seeds. Cut into small cubes. Peel the shallot and chop finely. Peel garlic. Rinse chile pepper, halve lengthwise, remove seeds and chop very finely.

Cut avocados in half, remove pits and scoop out the pulp with a spoon. Mash the pulp with the lemon juice to taste and mix with a fork, then add 2/3 of the diced tomatoes and the shallot, cilantro and chile pepper. Press in garlic, season with salt and pepper and stir well. Season to taste. To serve, sprinkle with remaining diced tomatoes and garnish as desired with some cilantro leaves. Serve with tortilla chips, if desired.
