Preparation steps

Blanch the tomatoes, rinse in cold water, peel, quarter, core and cut into small cubes. Peel the onion and chop finely. Rinse the jalapeño, remove seeds and finely chop,

Cut avocados in half, remove pits, scoop the flesh from the shells, and mash with a fork. Mix immediately with 1-2 teaspoons lemon juice. Mix in tomatoes, onion and the chopped jalapeño. Season with salt, pepper and lemon juice. Place in a serving bowl and serve garnished as desired with sliced, pickled chile pepper.
