500 grams ripe Tomatoes
½ stalk Leeks
1 Zucchini (150 grams)
1 shallot
1 garlic clove
3 Tbsps olive oil
1 Tbsp White vinegar
salt
freshly ground peppers
sugar (to taste)
400 grams mixed Ground meat
1 tsp Tomato paste
150 milliliters dry Red wine
Chili powder
12 Taco shells (each 15 cm diameter)

Preparation steps

1.

Rinse tomatoes with cold water, peel and cut into cubes. Cut leek in half, rinse under running water, shake dry and cut into rings. Rinse bell peppers, cut in half, trim and cut into very small cubes.

Rinse zucchini, wipe dry, trim and cut into small cubes. Peel shallot and garlic and chop finely.

Saute garlic in a pan with 1 tablespoon hot olive oil until translucent, add tomatoes and deglaze the pan with vinegar. Season with salt, pepper and a pinch of sugar. Simmer 5 minutes at medium heat, remove from heat and leave to cool.

In another pan heat remaining oil and saute shallot, leek, bell peppers and zucchini for 2-3 minutes. Add ground meat and fry until crumbly, stir in tomato paste and deglaze the pan with wine. Simmer over medium heat for 5 minutes until wine is almost completely reduced. Season with salt, pepper and chili powder.

To serve, fill tacos with vegetables and meat mixture as desired and sprinkle with a little tomato salsa. Serve immediately.
