Preparation steps

1.

Remove the steaks from the refrigerator 30 minutes before grilling. This ensures that the meat will be tender once cooked. Pat dry, and brush with oil. Season to taste with salt and pepper, then place on the grill. The cooking time will vary based on the thickness of the steaks.

Cook for 2-3 minutes on one side, until slightly browned. Turn over, and cook another 2-3 minutes. Typically cooking a steak in this fashion, will ensure that it has been cooked rare.

You can compare doneness by lightly pressing the center of the steaks with your finger. You can compare this doneness by touching your thumb and forefinger together, and feeling the heel of your hand.

After an additional 1-2 minutes per side, the meat is medium rare. The resistance in the middle of the steak is greater, comparable to how the heel of your hand feels when you touch together your thumb and middle finger. Medium doneness is an additional 1-2 minutes after this, and can be compared to touching together your thumb and ring finger.

For well done, cook another 1-2 minutes per side. This can be compared to the resistance you feel when touching the thumb and pinky finger together.

6.

Remove the steaks from the grill, cover, and rest for a few minutes tented with aluminum foil.

7.

Serve, if you'd like, with fries.
