800 grams Red mullet fillets (scaled and gutted)
2 bunches Arugula
4 Tbsps olive oil
2 Tbsps lemon juice
Sea salt
freshly ground peppers
lemons (for garnish)

Preparation steps

1.

Preheat the grill. Rinse the fish, pat dry and season with salt and pepper. Combine 2 tablespoons oil and the lemon juice and brush over the fish. Grill for around 4 minutes per side, or until cooked to your liking. 

2.

Rinse the arugula, shake dry and arrange on a serving platter. Drizzle with the remaining oil and arrange the grilled fish over top. Serve with lemon wedges.
