Preparation steps

Wash the potatoes thoroughly and cook in salted water with caraway seeds for 25-35 minutes (depending on size) until just cooked. Drain, and leave to steam dry and cool slightly. The skins should be dry before the next stage. Then halve the potatoes lengthwise, brush with oil and season with salt and pepper. Place on a barbecue and grill on both sides, until nicely browned. Serve garnished with thyme. Hand mayonnaise separately.
