1 tsp ground coriander

½ tsp ground paprika
½ tsp Harissa
½ lemon (juice and zest)
1 Tbsp Tomato paste
1 tsp chopped rosemary
4 Tbsps olive oil

800 grams lamb (such as Haxe)
120 grams Dried apricot
2 Tbsps finely chopped parsley

Preparation steps

For marinade, crush the cumin and coriander finely with a pestle. Peel garlic and halve. Mix all the spices with the lemon juice and zest, tomato paste, rosemary, olive oil and a little salt.

Rinse the meat, pat dry and cut into about 3 cm (approximately 1 inch) cubes. Alternately thread on skewers (or wooden skewers soaked in water) with the apricots and brush with marinade. Cover and infuse at least 2 hours in the refrigerator. Grill while turning 5-6 minutes. Serve garnished with fresh parsley. Serve with a yogurt dip and flatbread.
