- 800 grams lamb (Shoulder)
- 12 shallots
- 1 Red Bell pepper
- 1 green Bell pepper
- salt
- freshly ground peppers
- 100 milliliters olive oil
- 1 lemon
- 1 onion
- 1 bay leaf
- 1 tsp thyme

Preparation steps
1.
For the marinade, cut lemon in half. Cut one half into slices and squeeze juice from other half. Mix lemon juice and slices with oil, thyme and bay leaf.

Rinse lamb, pat dry and cut into 3 cm (approximately 1 inch) cubes. Place in marinade and marinate in refrigerator for 4 hours.

Peel shallots and blanch for 1 minute in boiling salted water. Drain, rinse and drain again.

Rinse bell peppers, cut in half, remove seeds and ribs and cut into bite-size pieces. Place lamb with shallots and bell peppers on skewers.
5.
Grill over a hot, but not excessively hot, grill for about 10-12 minutes. Vegetables will wither if grill is too hot. Drizzle with marinade while grilling, turning as needed. Season with salt and serve.
