1 kilogram ripe Tomatoes
2 onions
2 garlic cloves
2 centimeters fresh ginger
2 Tbsps vegetable oil
1 tsp Chili powder
1 pinch Ground nutmeg
1 pinch ground Cardamom
1 tsp Garam Masala
¼ tsp Saffron
150 milliliters Whipped cream
salt
freshly ground peppers
500 grams Paneer (cream cheese)
2 Tbsps Crème fraiche
2 Tbsps finely chopped cilantro

Preparation steps

Blanch tomatoes, peel, quarter and cut into large pieces. Peel and finely chop onions, garlic and ginger.

Heat oil in a saucepan, saute onions, garlic and ginger until translucent. Add tomatoes and spices and simmer, stirring occasionally, for about 30-40 minutes on medium heat. Puree and strain through a sieve, if desired. Soak saffron in 4 tablespoons of hot water. Combine with cream and add to sauce. Season with salt and pepper.

Cut cheese into 1.5 cm (approximatly 0.5 inch) thick slices, halve diagonally and place on a lined with baking paper baking sheet. Grill under the broiler until golden brown, watching carefully.

Pour sauce into plates, top with grilled cheese and serve garnished with creme fraiche and cilantro leaves.
