- 400 grams Paneer (Indian cream cheese)
- 3 scallions (chopped)
- 100 grams Cashews (toasted)
- 1 Red chili pepper (finely chopped)
- 2 garlic cloves (finely chopped)
- 1 Tbsp fresh ginger (grated)
- 2 tsps ground Turmeric
- salt
- 2 Tbsps Ghee
- 4 large Tomatoes
- Indian spice mix
- 1 Tbsp Coriander
- 1 Tbsp Cumin
- 1 tsp black peppercorns
- 1 Tbsp Cardamom
- 1 Cinnamon stick
- 6 cloves

Preparation steps

Fry the Indian spices over medium heat in a skillet. Stir frequently. Finely grind in a coffee grinder.

Heat the ghee in a pan and sauté the scallions together with the chilli pepper, ginger and garlic, stirring often. Crumble in the and mix in the cashews. Fry everything over medium heat while stirring. Season with 2-3 teaspoons of allspice (to taste), turmeric and salt. Add the Indian spices.
Rinse the tomatoes and cut crosswise into thick slices. Add 1 tablespoon of ghee into a pan and fry the tomato slices on both sides over medium heat briefly. Season with salt.
Serve the tomato slices each with 3-4 tablespoons of spiced paneer. If desired, serve with fresh lettuce leaves (arugula works well).
