- For the Indian spice mixture
- 1 Tbsp Coriander
- 1 Tbsp Cumin
- 1 Tbsp black peppercorns
- 1 Tbsp Cardamom
- 1 Cinnamon stick
- 6 cloves
- 2 Tbsps Ghee
- 3 scallions (chopped)
- 1 red chili pepper (finely chopped)
- 1 Tbsp fresh ginger (grated)
- 2 garlic cloves (finely chopped)
- 2 cups Paneer (Indian cream cheese)
- 1 cup roasted Cashews
- 2 tsps Turmeric
- 4 large Tomatoes (thickly sliced)

Preparation steps
1.
Place the spices for the Indian spice mixture in a pan and roast on a medium heat. Place in a coffee grinder and grind finely.
2.
Heat one tbsp ghee in a pan and fry the spring onions, chilli, ginger and garlic stirring continuously. Add the paneer and the cashew nuts and mix well. Fry on medium heat for a few minutes stirring continuously.

Season with 2 to 3 teaspoons of the spice mixture, turmeric and salt. Store the remaining spice mixture in a jar.
4.
Heat one tbsp ghee in a pan and fry the tomatoes on both sides on a medium heat. Season with salt and arrange on plates on top of the rocket. Top with 3 to 4 tablespoons of the spicy cheese and serve immediately.
