1 day-old White roll
2 shallots
2 garlic cloves
1 Tbsp olive oil
600 grams Ground beef
1 egg
½ tsp grated Lemon peel
salt
peppers
breadcrumbs

Preparation steps

Soak bread in a little water. Peel shallots and garlic and chop finely. Heat oil in a pan and saute shallots and garlic until soft. Remove from the pan and combine with ground beef, egg and lemon zest in a bowl. Squeeze bread and add to meat. Season with salt and pepper and knead everything until smooth and malleable. Add breadcrumbs, if needed.

The grill heat up.

With wet hands, shape small balls out of meat mixture and thread 4 balls on each wooden skewer. Grill on a hot grill for about 10 minutes, turning often.

If desired, serve with a yogurt dip.
