2 Eggplant
malt (Barley malt extract)
2 Zucchini
4 Tomatoes
2 garlic cloves
4 sprigs thyme
2 Tbsps lemon juice
4 Tbsps olive oil
4 Red mullet fillets (each about 250 grams, ready to cook)
freshly ground peppers

Preparation steps

1.

Rinse and trim eggplants, cut into approximately 0.5 cm thick slices (approximately 1/5 inch). Season with salt and let rest for about 10 minutes. Pat dry. Rinse and dry zucchini, cut lengthwise into slices. Rinse and peel tomatoes.

Peel and finely grate garlic. Rinse thyme, shake dry and pluck off leaves. Combine with garlic, lemon juice and oil.

Rinse fish and pat dry. Season with salt and pepper. Brush fish and vegetables with seasoned oil. Season vegetables with salt and pepper and grill everything on a hot grill (if desired, in aluminum foil dish) for about 10-12 minutes, turning occaionally. Baste with oil often. Serve.
