- 4 Corn
- salt
- 400 grams Cherry tomatoes
- 1 Avocado
- 1 red onion
- 2 garlic cloves
- 4 Tbsps white balsamic vinegar
- 6 Tbsps grapeseed oil
- 2 Tbsps freshly chopped parsley
- freshly ground peppers
- 4 white fish fillets (each about 180 grams, such as wolffish)

Preparation steps

Peel and clean corn, cook in boling salted water with a little bit of sugar for about 20 minutes or until tender.

Rinse and halve tomatoes. Peel and halve avocado, pit and cut into slices. Peel onion and garlic. Cut onion into thin rings and finely chop garlic. Mix garlic with vinegar and 4 tablespoons of oil. Add parsley and season with salt and pepper. Mix tomatoes with avocado and onion, arrange on plates. Remove corn from water, halve and arrange next to tomatoes. Drizzle vegetables with the dressing.

Rinse fish and pat dry, brush with remaining oil and season with salt and pepper. Grill on a hot grill for about 6 mintues per side or until golden brown. Serve with vegetables.
