Preparation steps

1.

Rinse fish, pat dry and cut into bite-sized pieces. Rinse, blanch and peel tomatoes. Rinse, trim and halve zucchini lengthwise. Cut into thick slices. Thread fish, tomatoes and zucchini alternately onto 8-12 skewers. Peel and press garlic through a garlic press into a bowl. Stir in 4-5 tablespoons oil, lemon zest and rosemary. Season with salt and pepper. Brush kebabs with flavored oil. Place on a hot grill and cook, turning often and brushing with more oil, 5-6 minutes.

2.

Halve lemons and grill, cut-side down, 3-4 minutes. Slice bread and drizzle with a little oil. Grill on both sides until golden-brown.

3.

Serve kebabs with grilled bread and lemon halves.
