3 sprigs parsley
2 Tbsps olive oil

Preparation steps

Wipe chanterelles clean and chop if large. Rinse parsley, shake dry, strip off the leaves and coarsely chop. In a pan, heat the oil. Add chanterelles and fry 3-5 minutes over high heat. Season with salt and pepper, mix in parsley and remove from heat.

Lay cheese slices on half of the bread slices. Place mushrooms on cheese, top with a second slice of cheese and a second slice of bread. Press well and grill, turning once, 6-8 minutes. Cut grilled sandwiches diagonally and serve in paper bags.
