- olive oil (for brushing)
- salt
- freshly ground peppers

Preparation steps
1.
Rinse beef, pat dry and trim. Cut into 2-cm (approximately 3/4-inch) thick medallions. Brush with a little oil and season with salt and pepper. Place on a hot grill and sear on both sides.

Move medallions to the edge of the grill and cook to desired doneness (for medium, about 4 minutes). Serve immediately.
